Crunchy Cabbage Salad with Peanut Dressing

Ingredients:

  • For the Salad:
    • 4 cups shredded cabbage (green or a mix of green and purple)
    • 1 cup shredded carrots
    • 1 red bell pepper, diced
    • ½ cup chopped fresh cilantro (optional)
    • ½ cup chopped green onions
    • ½ cup sliced almonds or peanuts (for crunch)
  • For the Peanut Dressing:
    • 3 tablespoons peanut butter
    • 2 tablespoons soy sauce (or tamari for gluten-free)
    • 1 tablespoon honey or maple syrup
    • 1 tablespoon rice vinegar
    • 1 tablespoon sesame oil
    • 1 teaspoon grated fresh ginger (optional)
    • Juice of 1 lime
    • Water to thin the dressing as needed

Instructions:

  1. Prepare the Salad:
    • In a large bowl, combine the shredded cabbage, carrots, bell pepper, cilantro, green onions, nuts, and edamame if using.
  2. Make the Peanut Dressing:
    • In a small bowl, whisk together the peanut butter, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, ginger, and lime juice.
    • Add water a little at a time until you reach your desired consistency.
  3. Combine:
    • Pour the dressing over the salad and toss well to combine.
    • Allow it to sit for about 10-15 minutes for the flavors to meld.
  4. Serve:
    • Serve chilled or at room temperature as a refreshing side dish or light main meal.

This salad combines the crunch of cabbage and vegetables with a rich, nutty dressing, making it a satisfying and unique dish.
