Barley, Mushrooms & a Whole Lot of Comfort

There’s something magical about soup on a rainy evening — the steam rising, the smell of herbs filling the kitchen, and that first warm spoonful that makes everything feel just right.

This Hearty Mushroom & Barley Soup is one of our absolute go-to meals when Cape Town’s skies are grey and the fire’s crackling. It’s earthy, rich, and oh-so-satisfying, with tender barley and loads of umami from the mushrooms. Add a slice of crusty bread, and you’ve got the perfect bowl of comfort to keep the cold at bay.

Let’s get the pot going!

Ingredients

Serves 4–6

Base:

  • 2 Tbsp olive oil or butter

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 2 carrots, chopped

  • 2 stalks celery, chopped

  • 250g fresh mushrooms (mixed types if you can: brown, portobello, shiitake), sliced

  • 1 tsp dried thyme

  • ½ tsp dried rosemary

  • 1 tsp smoked paprika (optional but lovely)

  • ¾ cup pearl barley, rinsed

  • 6 cups vegetable broth (or beef broth for extra richness)

  • 1 Tbsp soy sauce (adds umami depth)

  • Salt & pepper to taste

Finishing touch (optional but amazing):

  • 1 tsp balsamic vinegar or squeeze of lemon

  • Chopped fresh parsley or thyme to garnish

  • Crusty bread or toasted sourdough on the side

Instructions

  • Sauté the base:
    Heat olive oil or butter in a large pot over medium heat. Add onions and cook until soft and golden. Stir in garlic, carrots, and celery. Cook for 5 minutes until everything softens.

  • Add the mushrooms:
    Add mushrooms and cook until they release their juices and start to brown (about 8–10 minutes). Add thyme, rosemary, and smoked paprika.

  • Simmer it slow:
    Stir in the barley, broth, and soy sauce. Bring to a boil, then reduce heat to a simmer. Cover and cook for 40–50 minutes, stirring occasionally, until the barley is tender and the soup thickens.

  • Season & serve:
    Taste and season with salt, pepper, and a dash of balsamic vinegar or lemon to brighten the flavours. Ladle into bowls, sprinkle with fresh herbs, and serve with warm bread.

Tips & Variations

  • Add a handful of chopped kale or spinach in the last 5 minutes for an extra health boost.

  • Use leftover roast meat or shredded chicken for a non-veggie version.

  • If you don’t have barley, brown rice or farro also works beautifully.
