What is the buzz about? What is Microgreens and why are they good for you?

To start, they are powerfully flavourful, ranging from lemony to sweet to earthy to bitter. And despite their compact size, these little greens pack a serious nutritional punch.

The word “micro” here says it all. Microgreens are young seedlings of edible vegetables and herbs.

Unlike larger herbs and vegetables that take weeks or months to grow, Microgreens can be harvested and eaten a week to 10 days after the first set of real leaves appear.microgreens

While their nutrient contents vary slightly, most varieties tend to be rich in potassium, iron, zinc, magnesium and copper.

Microgreens are also a great source of beneficial plant compounds like antioxidants.microgreens

 

What’s more, their nutrient content is concentrated, which means that they often contain higher vitamin, mineral and antioxidant levels than the same quantity of mature greens

In fact, research comparing Microgreens to more mature greens reports that nutrient levels in Microgreens can be up to nine times higher than those found in mature greens.microgreens

In a society where people are consuming fewer vitamins, minerals, and antioxidants from food, Microgreens are an easy, low-calorie addition to meals that maximize the plant’s nutritional value.

There are many ways to include Microgreens in your diet.

  1. As a garnish for salads, soups, flatbreads, or pizzas.
  2. Add nutrition to a juice or smoothie.
  3. A side to any main dish.
  4. Add flavour and colour to an omelette or frittata.
  5. A alternative to lettuce in tacos or a burger or sandwich.

We introduced the kids to Microgreens a few years ago, and while Michael prefers the more spicy rocket, Leila absolutely love pea shoots.
