Ingredients

  • 1 cup fresh basil leaves (packed)
  • 1 cup extra virgin olive oil (or enough to cover the basil leaves)
  • A pinch of salt (optional, for flavour)

Instructions

  1. Prepare the Basil:
    • Rinse the fresh basil leaves thoroughly under cool water to remove any dirt or insects.
    • Pat them dry with a paper towel or use a salad spinner to remove excess moisture.
  2. Blend the Ingredients:
    • Place the basil leaves in a blender or food processor.
    • Pour in the olive oil.
    • If desired, add a pinch of salt to enhance the flavour.
    • Blend on high until the mixture is smooth and well combined. You may need to stop and scrape down the sides a few times.
  3. Strain the Oil:
    • Place a fine-mesh strainer or cheesecloth over a bowl or jar.
    • Pour the blended basil oil into the strainer, allowing the liquid to pass through while leaving the solids behind.
    • Press down on the solids with a spatula or spoon to extract as much oil as possible.
  4. Store the Basil Oil:
    • Transfer the strained basil oil into a clean glass bottle or jar.
    • Seal tightly and store in the refrigerator. Use it within 2-3 weeks for the best flavor.
